Poornam Boorelu | Poornam Boorelu Recipe | పూర్ణం బూరెలు
Poornam Boorelu is an Andhra festival recipe made with Chana Dal, Jaggery filling coated with the Urad Dal batter and deep-fried in oil.
• soaked urad 1 cup
• soaked Rice 1 cup
• salt ½ tbsp
• Water ½ cup
• maida/all purpose flour(optional) 1 tbsp
• cooking soda 1/4 Tsp
For the Filling Stuff
• Chana dal 2 cups
• jaggery (grated) 2 cups
• cardamom powder ¼ tbsp
• ghee 1 tbsp
• water 2 cups
• almonds 10 no’s
• cashew nuts 10 no’s
• Pistachios 10 no’s
• grated coconut grated 2 tbsp
• oil for deep-fry
Soaking and grinding Urad Dal:- Soak Rice and urad dal 2 to 3 hours.rinse, Put the soaked dal in a grinding jar, add water just up to the level of dal and grind until smooth.
The batter should be very hard like vada dosa batter.
Add cooking soda and maida to the batter and mix well.keep aside.
Boiling Chana Dal :- Rinse chana dal.
pour 2 cups of water and boil the chana dal should be cooked perfectly but should still retain the shape when pressed with fingers. Turn off the flame and strain out the water and cool down.
Preparing the Filling stuff :- Dry roast the almonds, cashew nuts, pistachios and make them into a powder. Grind the boiled chana dal into a powder, add grated jaggery, nuts powder and coconut powder. Mix well and until the jaggery melts. when the jaggery starts to melt keep mixing continuously until it turns into halwa consistency.
Add ghee, cardamom powder, mix well and turn off the flame, and cool down.
Assembling;- Make the filling stuff into equal proportions and make into round balls and put the balls in the urad dal & rice batter. coat them with the batter with a spoon properly. All the stuff is fully covered with batter on all sides.
Deep-Fry:- Heat the oil for deep-fryi, drop the coated balls into the oil. Fry evenly until they turn into golden brown color. take them on to a paper and keep aside.
